I normally make all my own marinades and rubs, or at least modify ones that I already have. But this time I actually picked up to Giant slabs of pre-set jerk chicken from @el_salchichero_butcher_shop and they were pretty rocking. Thanks to @Tam911 for the culinary guidance, so I can cook this without drying it out.
